Banana & Blueberry Pikelets

Ingredients

1 cup wholemeal self- raising flour   
¼ tsp bicarbonate soda           
½ cup milk (depends on consistency)
1 mashed banana
1/2 cup frozen blueberries

Tips

No need to spread with butter as they are quite moist with the blueberries.
Increase the protein by adding 1 egg to batter if egg yolk and white  have been given over 3 days with no allergy concerns.
Freeze three in a snap lock bag for quick easy finger foods.
Great for taking out for snacks.
Freezes well up to 3 months.

Instructions

Sift flour and bicarbonate soda into a bowl. 
Add milk and mix until batter is smooth.
Mix in mashed banana, adding more milk if needed to make batter thinner.
Carefully fold in blueberries.
Heat non-stick frying pan.
Place a heaped tablespoon of mix in frypan, press down to spread out.
Turnover when pikelet starts to bubble, press down other side, cook until golden. Cool on rack. Serve warm or cold.

Serve

Makes about 24 small pikelets
